Thin slices of the perfectly sweet mango filled with homemade cottage cheese.
Ingredients
2 Mangoes (Choose ripe Kensington Pride if in Australia or any sweet variety)
200 gms cottage cheese (paneer) * see note
4 Tablespoons caster sugar
1/2 tsp Cardamom powder
Method
Grate the paneer using a box grater in a flat bowl and then knead the paneer with your hand. Add one tablespoon of sugar at a time till the paneer comes together like dough with no cracks in it. Taste and add more sugar if required. Add the cardamom powder and rest it in the fridge if its a warm day.
*Note: Now i have made these with ricotta when i have been rushed to pull something together but the melt in your mouth Sondesh is best with freshly made cottage cheese (paneer).
